What I adore about Wellness Wednesday eats in Autumn is that #chefs tend to use a lot of root vegetables! They are often roasted when served and today’s dish is a nutrient-packed Sweet Potato based salad from my local @publix. 🥬 The ingredients are simple ~ #sweetpotatoes, #kale, organic #peanuts, #cranberries and #pumpkinseeds tossed in a light vinaigrette. Scrumptious!
